2-4 Boneless skinless chicken breasts
I Sweet Onion
4-5 Cloves Garlic
1 Can Diced Tomatoes
1 6oz Can Tomato Paste
1 Sm Can Mushrooms (Optional)
6 oz water, chicken or vegetable broth
2 tbsp Coconut oil
2 tsp Italian Seasonings
2 tsp Pinchitos (Spanish spices)
Turn crockpot on high.
Rinse and dry chicken, set aside.
Peel and cut onion in half then slice.
Peel garlic and mince ( I use a small food processor).
Open cans (if using mushrooms drain liquid).
Using a med bowl mix garlic, tomato paste plus one can water, chicken, or vegetable broth, diced tomatoes and mix thoroughly.
Put about 2 tbsp coconut oil in crockpot, once melted dredge chicken in oil then place chicken in crockpot.
Top with sliced onions (mushrooms if using) and tomato mixture.
Cook on high 5 hours.
Yields 2-4 servings
Steam chopped zucchini and top with some of the tomato and onions.
