Slow Cooker Pork Roast

3-4lb Pork Roast
1 Garnet sweet potato cut in 1/2″ slices
1 Yam cut in 1/2″ slices
1 Lg Sweet onion (I used Walla Wallas’ from my garden)
4-5 Carrots cut in large pieces. ( I used carrots from my garden and left whole)
Favorite Roast Seasonings (I used Emerils, Garlic Salt, and Onion Powder).
1/4C Low Sodium Worcestershire Sauce

Wash and prepare veggies

Start with a 3-4lb Pork Roast, place in crockpot.

Pour Worcestershire Sauce over roast. Season with favorite seasonings

Peel garlic. Using a large flat knife and “smash” the garlic and place on top of roast.

Quarter onions and add to pot.

Cover and cook 2hrs. on high.

After a couple hours add slices of sweet potato, yams, and carrots. Cover and finish cooking on low 2-3hrs until meat reaches 170• and vegetables are done.

Serve hot and enjoy. We like ours with creamy horseradish.
