Italian Faux Buffalo Stew

This dish really isn’t a stew as it has very little broth only the juices from the meat and tomatoes, but that doesn’t stop this from being one delicious meal.


Serves 3-4


1lb Grass Fed Buffalo Top Sirloin cubed
1-4oz can of Mushrooms drained (can use fresh mushrooms)
1-15oz can of Italian Stewed tomatoes w/juice cut into smaller pieces
5-6 assorted mini peppers sliced into rings
1 Med Onion chopped
2 Cloves Garlic minced
Several Brocoli Florets
1 tsp Basil
1 tsp Cumin (I love the earthy flavor it adds to the dish)
1-sm Crookneck Squash cut into slices then 1/4 ea slice
Coconut oil or Olive oil


Having all the ingredients prepared in advance helps the preparation of this dish go quickly and easily.
In large saute` pan on Med High heat add the oil and once oil is heated add the onions and garlic, saute until onions are translucent. Add buffalo meat and mushrooms, sautéing until meat is lightly browned. Then add the brocoli florets sautéing for several minutes. Dont over cook as you will be adding the other ingredients. Add the rest of the vegetables and seasonings and saute for several minutes. Lower heat to Med and add in the can of Italian stewed tomatoes. Let simmer about 5 min more.
Tips: If you want a more brothy dish add some organic beef broth.
Serve as is or over cauliflower rice. Add a salad to complete the meal.
